The Story

Two years ago I connected with Tomas and Francisco at Gran Tunal Destilería, searching for someone working with heirloom Mexican corn. We found it — a vibrant pink corn from Jilocotepec. Spontaneous fermentation, copper pot distillation, and two years resting in ex-Arette tequila barrels. This is the result.

tasting notes

Tastes like roasted corn from a street vendor — grain-forward, slightly chewy, genuinely sweet.
The tequila barrel brings an earthy, vegetal warmth mid-palate. Two traditions in one sip.
Long dry finish with a faint floral note from the pink corn. Add a few drops of water — it opens right up.
